Lentil and Sausage Soup

Tonight is movie night and we wanted something to eat while we watch a movie. We set up a large screen and projector and watch something fun. Tonight we are having this incredible soup. Like most of my soups, it is simple and packs a flavor punch.


  • 2 Kielbasa (about 1 1/2 lbs)
  • 1 Bag Lentils (16 oz)
  • 8 Cups Beef Stock
  • 1/2 Cup Red Wine
  • 1/2 Cup Water
  • 3-4 Cloves Garlic, minced
  • 1 Onion, chopped
  • 3-4 Carrots, chopped
  • 3-4 Celery Stalks, chopped
  • 2 Bay Leafs
  • 2 Teaspoons Thyme
  • 2 Tablespoons Olive Oil


  • Stock Pot
  • Chef’s Knife
  1. Sauté the vegetables in the olive oil until the wilt.
  2. Cut up the sausage into coins. We use one mild and one spicy but you can use any sausage that you like.
  3. By the time the sausages are cut you can add them to the vegetables.
  4. Add the broth and water and bring to a boil.
  5. Add the lentils and herbs.
  6. Reduce the heat to simmer, cover and cook for 50 minutes.

Serve with some parmesan toast and a hearty red.
